What's for supper?

Last night I was man alone. So I was able to try a steak from the doe my step son got for me. I made some baked potatoes, onions and mushrooms and a couple of the steaks, rare. Mmmm, a delicious meal.

Breakfast for dinner tonight. Cook up some bacon, fry some onions with bacon, toss into some scrambled eggs. Omelette deight! Maybe even some cheese! Won't go with beer, sooo, Bloody Mary time!

Big storms at the offing right now, however we did go for beer and wings with our shooting friends.
One couple leaves for Arizona in two weeks and another friend has prostate cancer and not doing too well, so
we felt one more outing was in need before Winter sets in. Had a great time.
At five in the afternoon it's two for one. I had two schooners of a nice Lager and two orders of wings.
The one order of wings I get are the hottest and even though no one else can eat them, they don't effect
me the same way. I love them. Then I get one order that is milder.
That's it until Spring I guess.

Well, last night was the big family dinner at our house. Carol worked all day preparing food,
and I spent all afternoon putting leaves in tables and arranging chairs ect. Then they all came.
Prime Rib, twice baked potatoes, scalloped corn, creamed spinach, the dreaded green bean casserole,
rolls and wine. Then pecan pie and little chocolate cakes.
BURP!
Then we opened presents. It's our rule that adults do not give presents to adults. Only the youngsters
get presents. Well, tell that to my oldest daughter living in New York. It was almost embarrassing to see
the number of packages I got from her. Almost, actually it was nice. Books and couple on new sweat
shirts along with a roll of toilet paper with Green Bay Packer emblems on each sheet.
Then for the finale, my Granddaughter gave me a brown envelope and said open this last. We hadn't seen
them for two years due to Covid so I wondered what the heck it could be. Well, it was ultra sound
pictures of my new to be great grand child. Gender not yet known.
It was a pretty good Christmas.
Oh, and those cutting boards I have been making, wow, they got snaped up very quickly.
I'm tired.

This is a dangerous thread. I love food. I will post a few of my favorite recent meals below. Hope I don’t boar you guys...

I was going to ask if I could come stay at his place for a couple of weeks. Would probably gain at least 10 pounds.

Well tonight is bitter cold outside and carol has some meaty pork ribs slowly roasting over Saur Kraut. It's
one of my favorites. Now she will brush them with BBQ sauce and put them back in for a bit. Along with
that is some whipped squash and a cold beer.

I don't normally chime in here but in early December was told I am diabetic. So I have changed my diet completely upside down. I cut out sugar, 100% on Day 1. On top of that I am diligently counting carbs and have gone from 180 lbs to a lean, mean 165. Hard boiled eggs, salads, cheese, chicken (no skin), veggies and lots of fiber. I can eat beef and steak but no fat.
Steak tonight, and veggies!

Good for you RR! I Applaud your strength and perseverance. We all need to make some adjustments along the way. I go for blood work tomorrow and will see in a couple days, if there are any changes I need to make.

Australia day today, national holiday so plenty of time and what would be more fitting than lamb.
Have had a shoulder in the smoker for 4.5hrs should be to the temp i want within the next hour so looks like dinner will be 7.30-8.00pm
Just picked a few cobs of corn from the garden to have with it, about to put them in the smoker.

I got my latest A1C results today. Better than I expected, down to 7.6. Haven't been below 8 for a year and a half. Still need to get it below 7 but I definitely have some more diet changes to make that will help.
