I’m learning to do that at home. When I traveled I ate well and when I got home I never cooked inside. That might have something to do with my outdoor kitchen and me eating better. I’ve learned how to cook roasts and casseroles to my perfection. I can even do great corn on the cob and baked potato and a salad. What I can’t do is two at once. Each requires my full attention.

But it’s more than that. Cooking for one person without eating the same leftovers for the next three days isn’t easy. So there is no real motivation to make a multi dish meal.

In the meantime I will continue making great tasting one dish meals.

Smoked Burgers tonight. Yes smoked for an hour then grilled off. With of course BACON. They were outstanding

My Irish wife made Corned Beef and Cabbage last night. She simmered it all day in her slow cooker
and it smelled wonderful. It was tender as can be. She served it up with Yukon Yellow potatoes.
Here's something for you. Did you ever eat the heart of a cabbage? When I was a kid my family used
to make their own sour kraut and each of us kids got a cabbage heart to chew on. Love them.
Crunchy and tastes something like a mild radish. Best if they're cold.

We did the Corned Beef and red potatoes last night. My wife decided not to do cabbage as she knows she would be eating it by herself.

I believe the best thing about having Corned Beef for dinner is the sandwiches on Jewish Rye the next day.

a quick but true corned beef story .... my wife is Irish to the bone .... her maiden name was Gilligan ... for our first St. Patrick's Day she went all out .... when she sat a platter of corned beef on the table I asked her what it was .. .. that took her by surprise and eating it took me the same way .... let's just say I tried to fake liking it and that didn't fool her one bit .... there is probably some Irish in our family history but none that I know of .... until that meal, the only corned beef I'd even knew existed came in an odd shaped can that you opened with a twist key .... .... I still don't care for real corned beef and still like to open a can to fry its slices

broccoli on a cookie sheet in the oven or the BBQ. Its great we do that also. Gives it a different taste. Its all about variety Coop. It really makes broccoli better if its frozen you are buying. Comes out more like fresh.

I made corned beef and cabbage with red potatoes last night, there's no more. The boys killed it all.

Tonight we made some chicken nugget tacos. I took some chicken breast and sliced it in 3/8" strips. Then flour, egg wash and seasoned breadcrumbs. We garnished the tacos with a mango salsa and some cilantro, lime and avocado creme. Damn they were some good tacos.
