Beef Jerky Recipe

It's been several years since I've made beef jerky, but I used to make it quite often, mostly with ground bison, but also with lean ground beef. I decided to make some today using 93% ground beef, which will be done between 6 and 8 o'clock tonight.

My nine year old Nesco Dehydrator came with a sturdy, plastic and metal Jerky Gun. I like the ribbon attachment which makes flat, long strips about an inch wide.

I found this recipe online (called Dakota Beef Jerky) when I first started making the stuff and liked it so much that it's the only recipe I use (and I do add the liquid smoke). Delicious.

The original recipe was for a 5 lb batch, but I scaled it back to make 1 lb batches.

1 lb. lean ground beef, bison, or venison
1 3/4 tsp Kosher salt
1/2 tsp liquid smoke (optional)
1/2 tsp fine ground black pepper
1/2 tsp onion powder
1/4 tsp garlic powder
1/2 tsp cayenne pepper
1/4 tsp Prague Salt #1

Combine and mix the dry ingredients, then add the mixture to the meat, followed by the liquid smoke (optional) and blend thoroughly. Wrap the mixture in plastic wrap (or a storage bag) and refrigerate for at least 6 hours or overnight.

Form the jerky and dehydrate at 140 degrees for 8-10 hours.

9 teaspoons kosher salt
3 teaspoons liquid smoke
3 teaspoons fine ground black pepper
3 teaspoons onion powder
2 teaspoons granulated garlic
1 1/2 teaspoons cayenne pepper
1 level teaspoon Prague powder #1

Buffalo Jerky is my favorite and there is a meat market in Denver that makes it. Its a little on the pricey side but man is it ever good. Good luck with the jerky there CT sounds good.

Jim, if you're asking me, I only use ground meat now.

But several decades ago, in what seems like another lifetime, I regularly made it with flank steak, thinly sliced across the grain, marinated for several hours in teriyaki, and dried on a rack in the oven set at the lowest temperature. It was pretty good as I recall.

Neat. It will likely come with a variety of packets of spices and an order form to buy more. I still have some of those that came with mine in 2011. ;) Like I said, I liked the Dakota recipe so much that it is all I've used since I found it. Lean beef or bison (or venison) is best. I look forward to hearing about your first batch. 8-)

Yes, exactly. And I just ate about half of the jerky I made today with a few glasses of wine and like bar food it was salty and I couldn't stop eating it; just one more... and then just one more. Regardless, it was very salty, so next time, I will cut the salt in half. Your mileage may vary. Enjoy.

I will cut the Kosher salt in half next time. It was pretty salty, but obviously not too salty to eat. I ate quite a bit and enjoyed it.

I used course ground Kosher salt (which is all I have in the kitchen) and no, I didn't dissolve the ingredients in water. I blended them in a large bowl, then added the meat and kneaded the mixture for a several minutes to combine everything, then transfered it to a quart sized baggie to marinate in the fridge overnight.

I had not seen that video (or any other) before I searched for something to share with you. I also don't remember it being so salty; my taste buds must have changed. :o

our dehydrator and Prague Salt should arrive tomorrow (Tuesday) .... as soon as it does we plan to mix up a half pound of hamburger as a test recipe to be dehydrated on Wednesday .... based on how that goes, we will decide if we need to alter the recipe ... our camping club is due for our last outing this weekend and we may well make more on Saturday .... we believe watching the process will be interesting to our folks
