Man Quiche

Man Quiche
(adapted from Ham and Cheese Quiche by Sanda Lee, Food Network)
2 medium red potatoes, cubed (1/2 inch)
1 clove garlic, diced fine
1 tablespoon dried rosemary
¼ cup onions, diced fine
1 cup cubed ham (1/2 inch)
1 (8 or 9 inch) premade pie shell in foil pan, thawed
1 cup shredded Colby (or cheddar and Monterey jack cheese blend)
3 eggs
1 cup milk
1 teaspoon All Purpose Seasoning (McCormick) or Emeril Original Essence
1/2 teaspoon hot sauce (Tabasco or similar and maybe more)
Preheat oven to 400 degrees F.
Place potatoes, garlic, onions and rosemary in microwavable dish, stir. Cover with a damp paper towel and microwave (high) for 2 minutes, stir. Microwave, again, for 1/2 minute.
Cover the bottom of the pie shell with the ham, then the cheese, then the potatoes, etc. Place on a cookie sheet and set aside.
In a medium bowl, whisk together the eggs, milk, seasoning and hot sauce and pour into the pie shell.
Place cookie sheet with quiche into a preheated oven for 35-50 minutes or until eggs have just set and the top is browned.
Take out of the oven and let cool for at least an hour, cut and serve.
