Omelet with diced red bell, baby bella mushrooms

Well, I haven't cooked today, but I'm going to make a post or two of the most recent things I have cooked.
I usually do most of my cooking/grilling/etc on the weekends, as I have more time.
I will fix enough for the week or enough to get me through till about Thursday or Friday.
I used to get up quite early - fix a nice breakfast for myself.
Haven't gotten up early in a while, but I did manage to fix this omelet on a day off...

Omelet with diced red bell, baby bella mushrooms, diced ham, chopped jalapeño from last weekend, Colby/Jack cheese.
