Killed Lettuce

Killed Lettuce
this is a traditional hot salad common to the western NC mountains ... my memories of it go back over 60+ years ... I realize that this recipe will surprise some and mystify others but man-o-man do I ever enjoy it .. .. I have seen it in other places where it was called wilted lettuce .... it is simple to to fix
chop spring onions (both white and green parts) into pieces about 1" long
clean and tear fresh leaf lettuce into bite size pieces
fry 6 or so pieces of bacon and crumble it (save grease)
arrange lettuce/onions/crumbled bacon on a plate
heat bacon grease to where it is smoking (you can add additional oil if needed, I use olive oil)
pour heated grease over the lettuce/onion/bacon, the hot grease will wilt the lettuce and be advised if water drops are on the lettuce it will spatter
eat immediately
picture one is of the salad and picture two shows yes I do eat it

Sounds good Jim! Will have to try that. After all, the wife is always trying to get me to eat more greens.

Never heard that dish referred to as "killed lettuce."
When I was growing up in rural south eastern Illinois, the dish was referred to as "wilted lettuce." A frequent spring dish when the first pickings of leaf lettuce and onions were harvested.

way back in this thread it points out process .... spring onions, leaf lettuce, bacon .... the bacon grease needs to be hot (some say smoking hot) make sure the lettuce is as dry as possible .... be very careful pouring it on the lettuce .... it needs to sizzle when it contacts the lettuce ..... looking forward to your commentsditchparrot wrote: βThu Apr 04, 2024 10:44 pmI'll be whipping up a plate of that before the coming weekend is out!
