One pan and not really "healthy" cooking
One pan and not really "healthy" cooking
This ranks as likely the most requested family breakfast when we are all together. Feeds a fair amount of people and left over's come out of the freezer great.
cast iron skillet is used
1# Sausage
1# Bacon
1 Bag frozen shredded hash browns (Thawed)
1 large yellow onion (minced)
1 bell pepper (minced)
2 Cloves garlic (minced)
CHEESE! (I like pepper jack and sharp cheddar) I grate about 8 oz. of each...or more.
12 eggs scrambled with a tsp. of dry mustard powder whisked in.
Cooking instructions:
Cook the bacon to desired doneness (I like crispy)
Remove the bacon and drain on paper towels.
Add the sausage to the bacon drippings and brown the sausage. Tip: Take the sausage out BEFORE it is all the way brown. Remove the sausage and allow it to drain.
Add the onion and peppers to the sausage and bacon drippings. Saute until the onions and peppers are soft and brown then add the garlic and stir it around for about two minutes. Remove all the aromatics from the pan and drain the pan into a container. Do NOT wipe the pan, just drain excess grease. Allow the pan to cool for a few minutes. Turn off heat to stove top.
Crumble the bacon into the sausage and mix in the onion, peppers, and garlic.
Preheat oven to 350.
To the pan add the following.
A layer of shredded potato
A layer of meat mixture
A layer of cheese
Repeat until you are out of ingredients then top with cheese. Pour the freshly whisked egg mixture over the layers and bake at 350 for 45+ minutes.
I use about half an onion and half a green pepper usually, I added some chopped green onions today.

I've often wondered why "health" food always tastes like crap, and all the really good stuff will kill you.
And "Almond Milk". Wutsupwitdat anyway? You ever see anyone milk an almond? I was gonna give it a try once, but couldn't find the handles.

Its actually good Gene. And if you dont care for milk like myself its better than real milk. Cant tell the difference on cold cereal.
