simple pineapple cake

Post by daytime dave » Mon Aug 15, 2022 11:48 am

I made this yesterday. I really liked it.

Image

A 20 oz can of crushed pineapple with juice (I used the same amount of fresh pineapple chopped finely)
2 cups all purpose flour
2 cups white sugar
2 tsp baking soda
2 large eggs
1 tsp vanilla extract.
Mix all thoroughly and bake in a 9x13 pan for 50 minutes until a toothpick comes out clean.

Frosting

1 8oz pkg cream cheese
1 stick of butter (softened)
1 and 1/2 cups confectioner's sugar
1 tsp vanilla

Melt butter and cream cheese in microwave 30 seconds at a time for about 2 minutes. Add sugar and vanilla and beat with a mixer for about 60 seconds at high speed. Add frosting to cake when it comes out.

That would have helped. It was a standard 350 degree oven.
