This concoction is sort of like my Wife's Mom's Spanish rice but we have added stuff to it.
Brown some extra lean ground beef until about 1/2 done. Add 1/2 t. minced garlic, 1/3 to 1/2 onion, chopped, 3 or 4 small sweet peppers, chopped. After the veggies are starting to soften, add 1 can red kidney beans and 1 small can sliced mushrooms,drained. Let this cook for 15-20 minutes and then add 1 pint chopped or diced canned tomatoes ( I use the ones I can). Let simmer for 20 minutes and serve with rice. Pictures follow.

Looks good. Might have to try it on some noodles or low carb tortillas, I have given up rice, raises my blood sugar too much, too fast.
