canned some applesauce
I canned some applesauce yesterday.
I used my new Weston food mill. You just steam the apples to soften them and it came out great. I used the water bath method to can.

People do a lot of canning around here. It was unheard of in Seattle. If I remember right this isn’t your first canning of the year.

How long does canned applesauce keep? I would be concerned that I would open a jar some time down the road and find out that I have created Boone's Farm apple wine. Had a bad experience with that stuff in High School.

I canned some spaghetti sauce a week or so ago. I'm canning more today. The last batch had just a few hot peppers from the garden and Mary thought it was a little spicy. This batch has only sweet peppers. I'll try and post the sauce in another thread.
The applesauce should last for years, but it won't get that chance. It will be eaten well before that. Once canned, any biological process stops and the jar is vacuum sealed. My mother canned every year. It is recommended to consume the canned items within 6 months to a year, but we often had things from a few years. You just check it when you open it. A properly canned item will last a lot longer than "recommended", the same as the store bought canned goods.

My grandmother always used wax for jams and occasionally we would find mold. Simple to cut that out and eat the rest.

My Grandmother was an amazing cook and canned pretty much everything. Her peaches were always as fresh as the day she cut them. I remember one dinner that she was cooking. She went down to the cellar and came back with a jar of corn. It was dated on the lid the day I was born. I was 13 years old when she opened that jar. It was crisp and delicious.
